GONGURA MUTTON CURRY
Gongura Mutton Curry is very famous in Andhra Pradesh in India. It is a mouth-watering recipe in any season. In every season Red sorrel leaves / Gongura is available, it enhances the flavour and taste of Gongura Mutton Curry. This is the best non - vegetarian recipe. Whenever our relatives visit our home, I prepare this recipe. Everyone has their own style of cooking. Today, I am preparing Gongura Mutton curry in my own style. This is a very easy and simple recipe.
Gongura Mutton curry is a little bit spicy and delicious dish. My family members love this recipe very much. Red Sorrel Leaves (Gongura) and spicy garam masala enrich the flavour of Mutton which makes it delicious. This curry is very tasty to serve with hot steamed Rice.
Let's start to prepare Gongura- mutton curry:
Preparation time: 40 minutes.
Cuisine: Andhra Pradesh.
Ingredients:
- Mutton - 1/2 Kg (washed and drained)
- Gongura (Red Sorrel Leaves) - 4 Cups
- Ginger Garlic Paste - 4 Spoons
- Garam Masala - 4 Spoons
- Red Chilli Powder - 4 Spoons
- Turmeric Powder - 1/2 Spoon
- Onions - 2 Big size, cut into medium pieces
- Tomatoes - 1 Big size, cut into small pieces
- Oil - 10 Spoons
- Coriander - 1 Spoon
- Curry Leaves - 1 Spoon
- Cumin Seeds - 1/2 Spoon
- Fennel Seeds - 1/2 Spoon
- Cloves - 5
- Cardamon - 2
Preparation of Gongura Mutton curry:
- Heat the cooker and then add washed & drained mutton, red chilli powder(2 spoons), turmeric powder(1/2 spoon), salt(1 spoon), Ginger garlic paste(2 spoons), Cloves(3), Cardamon(1), Oil(5 spoons).
- Stir well and add one glass of water. Insert a whistle on the top of the cooker and wait for 2 whistles.
- Boil Gongura with 5 Spoons oil, half glass of water in a low flame. When Gongura is cooked, let it cool for some time and grind into a smooth paste in a mixer jar.
- Take a big vessel or Kadai, add 5 spoons oil, Cumin seeds(1/2 spoon), Cardamon(1), Fennel seeds (1/2 spoon), Cloves(2). After tempering, add onion pieces and roast it well.
- Add ginger garlic paste(2 spoons) and roast it for 5 minutes.
- Add tomato pieces, turmeric powder(1/2 spoon), Red chilli powder(2 spoons), Garam masala(2 spoons), Curry leaves and roast it for 5 minutes.
- Add Mutton pieces along with water(Extracted from Mutton) and cook for 10 minutes.
- Add Gongura paste into the Mutton curry, stir it well till Gongura paste mixed with Mutton finely and cook it for 15 minutes in low flame.
- If necessary add extra Salt, red chilli powder according to your taste and then garnish with Coriander leaves.
- The delicious Gongura Mutton curry is ready to serve.
TIPS:
- While adding Gongura paste with Mutton, don't stir too much. Because the Mutton will be broken into small pieces.
- Cook the Curry in medium/low flame after tempering.
- You can either roast Gongura in oil or boil with water for your taste.
- Add Gongura paste if and only if Mutton is cooked fine, otherwise the Mutton pieces will become hard to eat due to sourness of Gongura.
