TAMARIND RICE / PULIHORA
Tamarind rice common name is pulihora/ puliyodarai, puliyogare which is a popular rice recipe in south Indian states Andhra Pradesh, Telangana, Tamil Nadu, Karnataka. Puli means sour in Tamil. Today I am preparing the Andhra style of tamarind rice which is a mouth-watering rice dish. Pulihora made up of tamarind, lemon. South Indians must prepare pulihora in every festival. It is the traditional, ancient prasadam that is prepared to pray to god. Today I use tamarind and lemon both in the preparation of pulihora. Tempering ingredients are most important to enriches the flavor of pulihora.
let's start to prepare tamarind rice:
Ingredients:
- Boiled rice - 1/2KG
To tampering:
- Oil - 10 spoons
- Mustard seeds -1 spoon
- Black gram/urad dal - 5 spoons
- Bengal gram/senega Pappu - 4 spoons
- Groundnuts - 5 spoons
- Cashewnuts - 12
- Cumin seeds - 1 spoon
- Curry leaves - 5 spoons
- Tamarind - 1 cup of a thick paste
- Lemon - 1
- Red chilies - 6
- Asafoetida/ inguva - 3 pinches
- Turmeric powder - 1 spoon
- Salt - 1 1/2 spoon
masala powder for pulihora:
- Corriander seeds - 4 spoons
- Cumin seeds/jeera -1 spoon
- Menthulu /fenugreek seeds -1/2 spoon
- Roast the three ingredients at the low flame without oil.
- Make a fine powder in the mixer jar.
preparation of pulihora:
- Boil the white rice and spread the rice on a big plate add 2 spoons hot oil and cool it.
- Heat a big Kadai/vessel add oil, mustard seeds, cumin seeds, urad dal/black gram, Bengal gram roast it for 2 minutes.
- Add red chilies, groundnuts, cashew nuts, roast it well.
- now add curry leaves.
- Add thick tamarind water into the vessel add salt, turmeric powder, inguva/ asafoetida.
- Cook for 15 minutes in medium flame.
- Now add masala powder.
- Boil for 5-10 minutes to thickening the tamarind water.
- Switch off the stove and cool it for some time.
- Squeeze 1 lemon into the boiled white rice.
- Now add pulihora paste into the white rice and mix it thoroughly.
- If you want to add salt to your taste.
Tasty, yummy, traditional pulihora ready to serve.
Tips:
- If you are not roasted the groundnuts, it is the first ingredient to add in the tempering oil.
- As per your taste use only tamarind.
- If you want green chilies add it in tempering.
