    Raw mangoes are available in all seasons, especially in summer season, everybody like raw mango chutney and Mango pickle.  We can prepare different varieties of recipes with mangoes like Mango Chutney, Mango Pachadi, Mango Pickle, Mango Rice, Mango Dal, Mango Curry and Mango juice etc.,   In India two varieties of pickles can be made with Mangoes, one is spicy pickle & other one is sweet Mango pickle.  
     Today I am preparing Spicy Raw Mango Chutney in my own style.  I am using Malguba variety of Mango to prepare this chutney.  This is a very easy and quick recipe.  This Raw Mango Chutney can be served with hot steamed rice which is yummy and mouth watering when a little bit of ghee is added to it while eating.  This recipe's flavour is mixed taste of Chutney and Pickle.  If it is stored in a air tight jar and kept in a Refrigerator, this will be good for one week.

Let's start to prepare Raw Mango Chutney:

Preparation time: 20 minutes.


INGREDIENTS:-
  • Raw Mangoes - 2 big sizes (Cut into small pieces)
  • Red Chillies - 15 to 20 (as per taste)
  • Coriander seeds- 2 spoons
  • Cumin seeds/Jeera - 1/2 spoon
  • Mustard seeds - 1 spoon
  • Fenugreek seeds/Menthulu - 1/4 spoon
  • Asafoetida/Inguva - 5 pinches
  • Salt - 2 spoons
  • Oil - 8 spoons (3 spoons-roast, 5 spoons-tempering)
Tampering Ingredients:-   
  • Oil - 5 spoons
  • Mustard seeds - 1/2 spoon
  • Cumin seeds - 1/2 spoon
  • Red Chilies - 2
  • Garlic Rebels - 5
  • Curry leaves - 1 spoon
Preparation of Raw Mango Chutney:-
  1. Clean the Raw Mangoes well with water and dry it for some time.
  2. Cut the dried Raw Mangoes into small pieces.
  3. Heat the vessel/Kadai, add 3 spoons oil, Coriander seeds, Cumin seeds, Mustard seeds, Fenugreek seeds, Red Chillies and Asafoetida/Inguva.
  4. Roast the above all ingredients in the oil for 5 minutes in low flame.
  5. Turn off flame and allow it to cool.
  6. After cooling it, make it powder in the mixer jar.
  7. In the same mixer jar, add salt, 3/4th of Raw Mango pieces and grind it into a rough texture.
  8. Take the Raw Mango Chutney in a bowl and add remaining 1/4th of Mango pieces.
Tampering the Chutney: -
  • Switch on the stove and keep a big vessel on it.
  • Add 5 spoons of oil, Mustard seeds.
  • After splitting of Mustard seeds add 2 Red Chillies(by cutting it into pieces).
  • Add Garlic Rebels, Cumin seeds, Curry leaves.
  • Add Mango Chutney in the vessel after tempering.
  • Roast it well for 5 minutes in low flame.
     Now, Yummy and delicious Raw Mango Chutney are ready to serve.

TIPS: - 
  • Roast all ingredients in low flame.
  • Add ingredients one by one while tampering.
