TOMATO CHUTNEY
South Indians especially in Andhra, Telangana, Chennai, Karnataka people like spicy chutneys. So many varieties of chutneys are prepared by housewives with their traditional methods. Today I am preparing tomato chutney in my own style. It is prepared in different methods in various places. But, it is my secret chutney recipe and eats with rice, idli, dosa, Pongal,upma, vada etc. It is my children one of the favourite recipes.You are also preparing this chutney and enjoy with your family, friends.
Let's start to prepare tomato chutney
Ingredients:
- Tomatoes-1/2kg
- Red chillies/green chillies-10
- Coriander-2 spoons
- Cumin/jeera-1spoon
- Ginger-2 spoon{ smallpieces}
- Tamarind-balance to spiciness/small lemon size
- Asafoetida/Inguva-1/4 spoon
- Curry leaves-3 spoons
- Coriander leaves-6 spoon
- Oil-6 spoons
- Ghee-2spoons
- Salt-for taste
Preparation of tomato chutney:
- Heat a big vessel on the stove add oil, coriander, cumin seeds, red chillies /green chillies and roast it well in low flame.
- Above ingredients are roasted, then add tomato pieces, curry leaves, coriander leaves, ginger pieces, asafoetida, salt and the secret ingredient ghee and close the lid.
- boil it for 15 minutes in low flame till tomatoes water evaporated. Don't add water in it and only roast with oil and ghee.
- Add tamarind in the tomatoes pulp and roast it for 5 minutes.
- Then switch off the stove and keep the tomatoes will cool.
- Grind the chutney in the mixer jar and shift into a bowl.
- yummy and tasty tomato chutney is ready to serve.
TIPS:
- Don't add water in the chutney.
- If you want to preserve the chutney, don't add onion pieces in the chutney, onions will spoil the chutney.
- If you add onions, tomato chutney will preserve for only 1 day.
- Ghee is the secret ingredient in this recipe.
- Use only oil, ghee for roasting.
- If you want to tamper the chutney, you will tamper it.
- It is preserved for 5 days in the refrigerator without tampering.
- If you want to preserve the chutney in the refrigerator just like a pickle, just tampering the tomato chutney.
