Description:
Brinjal masala curry/Guthi vankaya curry
is one of the famous curries in South India. It is made in different styles in
different places. Three varieties of brinjal are available in AP &
Telangana but I prefer round or oval shape brinjal. This delicious curry is made in my
own way and can be prepared easily.
Ingredients:
- Brinjal ā Ā½ kg
- Onions ā 1(Big)
- Tomatoes ā 2
- Coriander seeds(Dhaniyalu) ā 1 spoon
- Jeera/cumin seeds ā Ā½ spoon
- Bengal gram (Pachi senega Pappu) ā 3 spoons
- Urad dal/black gram (Minapappu) ā 2 spoons
- Groundnuts(Verusanaga Pappu) ā 2 spoons
- Cashew nuts ā 1 spoon
- Red chilies ā 5
- Ginger, garlic paste ā 2 spoons
- Garam masala ā 1 spoon
- Ghee ā 1 spoon
- Turmeric ā Ā½ spoon
- Curry leaves & Coriander leaves
- Oil ā 6 spoons
- Fennel seeds(Sompu) ā Ā½ spoon
- Lemon juice ā 1 spoon
Brinjal masala preparation:
- Take a vessel and put it on a stove in low flame. Place coriander seeds, jeera, Bengal gram(Pachi senega Pappu), urad dal/black gram (Minapappu), red chilies, groundnuts, cashew nuts in the vessel and roast it well without oil.
- Let it cool for a few minutes and make a fine powder in a mixer grinder.
- Take a plate and place the fine powder which is prepared earlier, salt, ginger garlic paste, garam masala, turmeric powder, ghee, lemon juice.
- Add a little amount of water to make it a paste-like texture.
Brinjal masala curry preparation:
- Cut the brinjal stem and cut it in plus symbol at the backside up to its head part.
- Take a bowl of salt water and place the brinjals in it for a few minutes.
- Fill the vankaya masala in the brinjal and just keep them aside in a plate.
- Now, heat a big vessel on stove and pour some oil, fennel seeds, and brinjals and close the lid, roast it in low flame for 5 minutes.
- Flip over the brinjals and place some curry leaves, close the vessel with lid.
- After 5 minutes add tomatoes, onions, and place the lid.
- Open the lid, add remaining masala paste into it and pour some water, and let it cook for 10 minutes in low flame.
- Finally, add coriander leaves and turn off the stove.
Guthi Vankaya curry/ brinjal masala curry is ready to serve.....
Tips:
- Do not cook at high flame.
- Ghee is the secret ingredient in this recipe.
- If Brinjals, onions, tomatoes roasted well in the oil then add the masala paste.
