GONGURA CHUTNEY /
RED SORREL CHUTNEY
Red sorrel leaves have one of the rich sources of iron and it is used as a green leafy vegetable and used in non-veg recipes also. I am preparing chutney and this is the most favourite chutney for south Indians. Today I am preparing ANDHRA GONGURA chutney also called pachadi in the Telugu language. This is served with hot steamed rice and a little bit of pure ghee, the taste is amazing and kids,elders and all ages of people like very much this chutney.Once you taste this chutney, you never say no to eat.
LET'S START TO PREPARE:
INGREDIENTS:
- Red sorrel leaves - 3 bunches
- Coriander - 1 spoon
- Cumin seeds - 1/2 spoon
- Red chillies - 10 - 12 [as per your taste]
- Asafoetida - 4 pinches
- Oil - 6 spoons
- Garlic - 5 cloves
- Salt - 1/2 spoon
PREPARATION:
- Heat a big Kadai/vessel add oil, coriander, cumin seeds, red chillies and roast the all ingredients for 5 minutes in low flame.
- Switch off the stove and keep away for cooling.
- Make a rough-textured powder in a mixer jar.
- Now clean the red sorrel leaves thoroughly with fresh water and filter the excess water from the red sorrel leaves.
- Heat a big vessel and add oil, red sorrel leaves, asafoetida and roast it for 8- 10 minutes until it becomes a paste.
- Switch off the stove and cool it for some time.
- Add the roasted red sorrel paste into the mixer jar, which is already roasted red chillies rough powder.
- Add salt, garlic cloves into it.
- Now mix in the mixer jar just 5-6 seconds.
- If you want to add onion small pieces for the taste if you don't want to avoid it. If you add onions chutney is not preserved for two or three days.
- Don't mix above 5 minutes why because it bcomes very pasty structure.
- If we want the traditional style of gongura / red sorrel chutney only mix for 5 seconds and its looks, taste wise hand-made grandmother's chutney.
The most famous gongura chutney /red sorrel chutney is ready to serve and try it once in your home, who doesn't like this chutney. It is very easy and simple to prepare for beginners also.
